Beef Steaks with Gorgonzola Butter

4 8 Oz. boneless beef top loin steak- cut 1 inch thick, 2 Tbsp crumbled Gorgonzola cheese of Blue Cheese, 2 Tbsp soft cream cheese with onion & garlic, 1 to 2 Tbsp softened butter, 1 Tbsp chopped pine nuts or walnuts (toasted) For Gorgonzola Butter: In bowl stir together Gorgonzola cheese, cream cheese, butter and nuts. Shape into 1 inch diameter log. Wrap in plastic wrap and place log in refrigerator until firm. Trim fat from steaks and season with salt to taste. Place steaks on grill directly over medium heat. Grill until steaks reach desired doneness, turning once halfway through grilling. To serve: Cut steaks in half and cut butter log into 8 slices. Place one slice of butter on each steak and serve immediately.
