Grilled Mussels Appetizer

One and one-half pounds of black mussels- leaned and debeared, 1/3 cup extra virgin olive oil, 4 cloves of garlic, 1/2 cup of chopped parsley, 2 sprigs fresh mint (chopped), Kosher Salt, Ground Black Pepper, One fresh lemon Heat Grill (gas or charcoal) to approximately 350 degrees. Crush garlic in large bowl and combine with olive oil, chopped fresh mint, and chopped parsley. Mix well. Add mussels to mixture and toss to coat all sides of mussels. Sprinkle with salt and pepper to taste. Transfer coated mussels to grill basket and place on grill (covered) for 1 minute. Shake basket or stir mussels and grill 1 additional minute or until mussels open. Discard any unopened mussels. Transfer mussels to large serving dish and squeeze fresh lemon over all mussels. Serve immediately. Eat mussels from open shells. Makes a great appetizer. If desired, try with McManis Chardonnay (California). Enjoy!
