Teryaki-Pineapple Steak on Hasty Bake

- Cuts of filet mignon, edge-wrapped with bacon pinned by toothpick(s).
- Place wrapped cuts in shallow bowl/container/pan to fit.

On top of each filet …
- Crush garlic with press directly onto exposed side, and work into meat with convex (round) side of spoon.
- Spoon on 2+ teaspoons of pineapple juice (from can of sliced pineapple).
- Place one round pineapple slice, then cover meat generously with teriyaki, using the hole in the pineapple as a “well.”
Let marinate for 15-30 minutes, turn filet(s) over, repeat garlic-juice-teryaki application.

Place steaks on Hasty Bake with pineapple slice, and refill “well” with marinade.

Close cover and bake-smoke steaks for half the expected cooking time for the thickness of the cut/preferred wellness.

Turn steaks over, position pineapple slice on new side and refill “well” with marinade. Close cover and bake-smoke for remaining cooking time/until done to wellness.

Remove bacon wrap, (drizzle on very small amount of marinade optional), serve and enjoy.

Note: Works with other cuts of beef as well; pineapple juice has great tenderizing properties — just add more juice to tougher cuts and let it marinade longer.
