The Legacy - Model 131 - Black Powder-Coated Finish
I’ve had the new Hasty Bake Legacy 131 for about 2 weeks now, and it is a fantastic cooker. Build quality, fit & finish are excellent, and the design is very well developed. Mastering the fire management on a HB has a little bit of a learning curve, as any charcoal cooker does, but it doesn’t take long at all to get the hang of it. It does take practice (the rotating air dampers on the new models are great and make temp control more precise). Here is what I did after receiving my new Legacy: I started with a test burn using a load of briquettes just to figure out the air flow. A few days later I smoked a pork loin and a boneless turkey breast at the same time. They both came out great, even though I had trouble keeping the temp down. I did one more test run without any food on the grates, this time adjusted my technique, and was able to maintain a 250 deg hood temperature for about 5 hours. Next I cooked steaks on the HB using the reverse sear method, and I don’t think there is a better cooker on the market for reverse searing than a Hasty Bake. My first steaks on the HB were some of the best I have ever cooked. It easily held the temp steady at 250 for about an hour before cranking up the fire box for the sear. Building the right size fire, and then tending the air flow to maintain the temp you want takes time and attention, and if you’re willing to sacrifice some charcoal for a couple of practice runs, the payoff is totally worth it.
The Hasty Bake Legacy is absolutely fantastic. I’ve been smoking & grilling meat for a few decades now, and this is the most versatile and capable cooker I have ever used.
FWIW, my advice: When you order, add on the side table, Fire Strangler, and Hasty Snake accessories. Also, watch the videos on Hasty Bake’s YouTube channel. They’re very helpful.
